My friend Erika has probably tasted 94 out of the 96 bundt cakes…and that’s not an exaggeration. I would consider her one of my bundt cake experts.
I made this cake, photographed it and then took it to where she was the other day…after I arrived, there was a little mishap and the cake actually fell icing first onto the carpet of the building. Because I had just removed it from the fridge about 20 minutes before, the cake was still chilled and the icing wasn’t super soft…so Erika flipped it back over and we acted like it never happened. We considered it the 5 second rule via bundt cakes. (Don’t judge, we were reallllllly desperate at that very moment!) Well….a little while later, Erika texted me this:
You see?! Erika, an official bundt cake taster, knew it had hit the floor and not only ate the cake, considered it her very favorite. And like I said, she’s had almost all of them. If Erika thought this cake was that good…how good will you think it is? And yours probably won’t have been upside down on the carpet…
1 box of yellow cake mix
2 small boxes of instant banana pudding
1/2 cup of veggie oil
1 1/4 cups water
1 cup mashed bananas (about 2 bananas)
1 1/2 cups peanut butter, divided
3 cups powdered sugar
1 stick of butter, softened
3-4 splashes milk
Preheat oven to 350 degrees
Grease (I use Pam) a 10 inch bundt pan
In medium sized mixing bowl, combine cake mix, puddings, oil, water and eggs with electric mixer. Beat in mashed up bananas and 3/4 cup of peanut butter. Pour batter into prepared pan and bake 40-45 minutes or until toothpick inserted comes out clean.
Let cake rest on counter in pan 10 minutes. Then, invert the cake onto a serving plate to finish cooling.
To make the frosting, combine powdered sugar, softened butter, and milk with an electric mixer. Beat in remaining 3/4 cup peanut butter. (Add more powdered sugar if it’s too runny and more milk if it’s too thick).
Frost cooled cake.
You know what else is awesome about this bundt cake? You can totally use girl math! Peanut butter plus a banana in your cake totally makes it healthy with girl math…that means you can eat two pieces (or even three!).
