One of my family’s favorite things is butterscotch. We’re pretty obsessed with it actually. The other day, Andrew suggested I make Butterscotch Neiman Marcus Bars…he’s pretty brilliant sometimes.
Shopping List
1 box of yellow cake mix
4 eggs
1 stick melted butter
2 cups butterscotch chips
2 cups butterscotch chips
1 box of powdered sugar (about 4 cups)
8 oz package of cream cheese, softened
Preheat oven to 350 degrees. Grease one 13×9 inch pan.
In a mixing bowl, combine cake mix, 2 eggs and melted butter. Spread in bottom of pan.
Take one cup of your butterscotch chips and melt them in your microwave, stirring every 30 seconds.
In a second bowl, beat with electric mixer, powdered sugar, 2 more eggs, cream cheese and melted butterscotch chips until smooth. Next, stir in your remaining one cup of butterscotch chips.
Spread on top of crust mixture.
Bake 35-40 minutes until edges are brown and center set (it will still be slightly wobbly in the middle).
Cool on counter 30 minutes, then refrigerate 2 hours up to 2 days.
Like I said…sometimes, my husband is just brilliant. This was one of those times. Enjoy!

Those sound yummy. Gonna make them for our upcoming Canada day long weekend. Is powdered sugar the same as icing sugar? Us Canadians call some things differently than Americans, wierd huh? We don't get sticks of butter either. I always have to google how much a stick of butter is so I can measure it out, lol.
On another note, a while back you posted the smore cookie recipe. Well let me tell you it is now a favorite around here. My daughters bf absolutely loves them. Everytime he is home I send a batch back to school with him. Apparently his friends like them too when he decides to share. They are an absolute hit everytime. My daughter made them this past weekend when she had a crew putting a new roof on her house. She did a blogpost about them today on her blog too. A sure hit.
Let's see if the butterscotch bars do the same thing.

I made a similar version in the fall, but I added oatmeal to the cake mix part and had oatmeal butterscotch bars. To date one of the more popular ones I have made. I love anything butterscotch:)
