You know how I love a Sloppy Joe! To me, they’re just family food. This is your basic, eat dinner with the ones you love on a week-night, kind of supper…and I love it! These came together in minutes and were delicious! Enjoy them tonight with your family too.
This recipe serves 4 hungry adults.
Shopping List
2 pieces of frozen Texas Toast per person, toasted in the oven per package directions
1 pound of ground beef
1 (14 oz) can of diced tomatoes, drained
1 1/2 cups BBQ sauce (your favorite)
1 1/2 cups Cheddar cheese, shredded
Pickled jalapenos to garnish, optional
Extra Virgin Olive Oil (EVOO)
Salt and Pepper
In a large skillet over medium-high heat, brown your ground beef in a splash of EVOO. Once brown, sprinkle in a little S&P and reduce heat to low and stir in your tomatoes and BBQ sauce. Simmer uncovered about 8 to 10 minutes.
Take your toasted Texas toast and spoon your Sloppy Joe mixture down over the top. Sprinkle a little cheese on top and garnish with your jalapenos.
Dinner is done! And wasn’t it simple?!?!

Yum! We do something similar to this and it's a BIG hit at the house. And because I am really into savings and never wasting, if we have leftovers, I will make rolls ups with cheese and crescent rolls the next day for snacks. (I know you don't use leftovers, or I read that at least.) It's a great snack especially since my fiance is a HUGE snacker!

I made this last night and it was a hit. I used ground Turkey instead of the beef and it was still really good.
