This dinner wasn’t only incredibly easy, it was delicious and flavorful too! I whipped this up on a busy weeknight and it was on the table in less than 30 (with very little effort!).
I found an old Southern Living recipe that made cumin crusted pork but I thought it would be more tasty to make it with boneless, skinless chicken breasts instead. However, if pork cutlets rock your world, then feel free to substitute. Some people might be scared of cumin but it’s just a smoky spice (not hot and spicy at all!). Cumin gives everything a nice smoked flavor and compliments cheese and other Mexican flavors well…so naturally, I paired the two. You will make this simple chicken dinner over and over again.
Shopping List
4 boneless, skinless chicken breasts
1 cup cornmeal
1 tablespoon ground cumin
pinch of salt and pepper
1 egg, slightly beaten
1 cup Cheddar cheese, shredded
1 1/2 cups salsa
Preheat oven to 400 degrees.
In a large bowl (I used a pie plate), combine your cornmeal, cumin, salt and pepper with a fork. In a second bowl (I used another pie plate), beat your egg.
Take each chicken breast and first dredge them in cornmeal, then dredge them in egg and then finally dredge them back in the cornmeal a second time making sure to coat both sides.
Lay each chicken breast on a foil-lined baking sheet coated with Pam (for easy clean up!).
Bake your chicken 20 minutes. Open oven door, sprinkle cheese down the tops of each chicken breast and then pop back in the oven another 5 minutes or until cheese is nice and bubbly.
Remove chicken from oven and spoon salsa down over the top.
Done!
See how simple that is?!? So full of flavor and yet so simple to make. For an easy side, try my roasted tomatoes and broccoli too…
Shopping List
1 pint of cherry tomatoes
2 cups of chopped broccoli
Extra Virgin Olive Oil (EVOO)
Salt and Pepper
Preheat oven to 400 degrees.
On a foil-lined baking sheet sprayed with Pam (for easy clean up!), spread out your tomatoes and broccoli. Drizzle EVOO down over the tops of your veggies and sprinkle liberally with S&P.
Roast in the oven about 15 minutes.
Serve along side your favorite meal.
I love a simple supper…and this certainly fits the bill.
