This is what happens when you let your 4 year old help you plan dinner…you get a theme (like green) and off you go.
Kensington loves meatballs and said she wanted green ones…hmmm..easy enough. Not only were Kensington’s green meatballs yummy but they were packed full of veggies too! Score for mom! Don’t forget, this is a One Pound meal…which means you could substitute the ground turkey for beef or chicken instead!
Shopping List
1 pound of ground turkey
1 box of frozen spinach, thawed and squeezed of all excess water
10 green onions, chopped
1 egg
1 cup of breadcrumbs (or Panko)
1/2 cup Parmesan cheese, grated
a pinch of both Salt and Pepper
2 tablespoons Extra Virgin Olive Oil (EVOO)
1 small jar of Pesto (about a cup)
Preheat your oven to 400 degrees.
In a large bowl, combine your first 8 ingredients. Shape mixture into golf ball sized meatballs and place them on a baking sheet lined with aluminum foil and sprayed with Pam (to help with cleanup!).
Take a tablespoon or so of pesto and top each meatball with some pesto.
Bake about 25 minutes or until the juices run clear and your meatball is brown and cooked through.
Dinner is done! Let’s all be thankful Kensington didn’t want pink meatballs…

I've never had a dishcloth stained green before…maybe your spinach is too mushy and defrosted? You could use a paper towel for squeezing the water out? I've done that and it works really well!

I put the defrosted spinach in a mesh strainer (I like the one that hangs over your sink) and then push out all the excess water with a big plastic spoon or spatula. Works pretty well.

These look delicious! Although I am slightly pesto obsessed. And think they'd be a lot of fun served on top of pesto pasta as well.
