As I was walking into the grocery store the other day, I got a phone call that I needed to make a meal for some people that night. Which means…I had no time to whip up dessert and I had to think fast.
So, what did I do? I headed to the ice cream department for some inspiration…
And it was there that I found this…
Ben and Jerry have Red Velvet Cake ice cream?!?! Holy cow! I knew I could mix and match something out of that brilliance. So, I headed to the bakery department…
And found some yummy bakery chocolate chip cookies. Paired with some chocolate sprinkles, I had dessert!
Do I even need to mention the mix and match opportunities here? Sugar cookies paired with lemon ice cream, oatmeal raisin cookies paired with snickerdoodle ice cream, chocolate cookies paired with cookies and cream ice cream…let’s not get me started on the possibilities!
I came home, I whipped up my ice cream sandwiches and bam! Dessert was done.
My kids thought these little treats were extra yummy too…the perfect easy dessert for busy ladies.
Shopping List
Store bought (or homemade if you like) chocolate chip cookies
1 pint of your favorite ice cream
Sprinkles, optional
Take one cookie and press 1/4 cup ice cream on the center. Top with another cookie and press down. Roll the sides of your ice cream sandwich in a bowl full of sprinkles.
Serve immediately or freeze on wax paper in the freezer.
It’s the simple ideas like this that you and your family will come back to time and time again.
