The other night, I ate dinner with my grandparents and my grandpa Ken brought me a newspaper from his hometown. They had been traveling through, stopped and got a paper and he saw a recipe for this simple Mexican casserole. He said he thought it would be something I would like…and he was right! I came home, tweaked it just a tad and made it for my family. We loved it! This is the perfect weeknight meal!
Shopping List
1 pound of ground beef (we used ground turkey instead)
1 package of taco seasoning
2 cups cheddar cheese, grated and divided
1 can of cream of chicken soup
8 to 10 green onions, chopped
5 flour tortillas (we used whole wheat tortillas but you use what you like)
Preheat your oven to 350 degrees.
In a large skillet over medium-high heat, brown your ground beef until cooked and crumbly. Stir in your taco seasoning, soup, 1 cup of cheese and most of your green onions. Reduce heat to low and simmer a minute or two.
Meanwhile, spray an 8×8 inch baking dish with Pam. Layer half of your ground beef mixture across the bottom of the dish, spread out tortillas over the top and repeat with another layer of beef. Top with one last row of tortillas. Top casserole with your remaining one cup of cheese.
Cover casserole with foil and cook 25 minutes. Remove foil and cook another 5 to 10 minutes or until brown and bubbly.
Remove from oven and serve with a few extra pieces of green onion.
So simple and so delicious! Plus, this would be really easy to double and prepare for a larger crowd in a 13×9 inch baking dish.

So the ONLY Mexican food my husband will eat are Taco Bell beef and cheese tacos. I wanted to try this for dinner and told him it was "taco bell casserole." Well I loved it and he said it was "even better than taco bell." Haha! The only thing I would adjust is I would probably garnish it with just a teensy bit of sour cream 🙂

Holy heavenly casserole!! I made this a few nights ago for me and my husband. Let's just say I was very happy that I was wearing my stretchy pants. 🙂 We will be keeping this in our dinner rotation. We added a bit to ours as well, we added some sourcream and red sauce to the top. Delicious! Keep up the yumminess!
