Hello yummy.
I was flipping through my Gooseberry Patch Weeknight Dinners book and found a recipe similar to this one in the “meatless” chapter. Hmmm…it sounded good without meat, but I thought it might sound even a little better with meat. You decide what’s right for your family…this can go vegetarian or not. You can also use ground beef, turkey or chicken. So many options…but only one pan required.
That’s right. Dinner on the table with only one pan getting dirty.

Shopping List
1 pound of sausage (we like to use a breakfast sausage like Owen’s), optional
Extra Virgin Olive Oil (EVOO)
3 cups mushrooms, sliced (use whatever kind you love)
1 onion, chopped
2 garlic cloves, chopped
4 cups water or chicken stock
1/2 pound of a short-cut pasta (I used rigatoni)
1/2 cup sun-dried tomatoes from a jar, drained of the oil, chopped
handful of Parmesan cheese, grated
***Make sure you use a skillet with a lid!***
In a large skillet, brown your sausage over medium-high heat in a drizzle of EVOO (skip this step if you’re omitting the meat).
Once your sausage is crumbly and cooked through, add in your sliced mushrooms, onion and garlic and saute about 5 minutes. Stir in your water (or stock) and bring to a boil. Stir in your uncooked pasta and tomatoes. Reduce heat to medium and cover. Simmer about 10 to 12 minutes, stirring occasionally, or until pasta is tender and liquid is absorbed. Stir in cheese at the end and serve.
One Pot meals just rock my world. Such a yummy dinner for family time.

Oh my goodness does this look yummy! Since the hubby doesn't eat pasta (what in the world is wrong with him?!?) I will make this some weekend when he is out of town and just eat off it for every meal. Sounds healthy, right? 🙂

This dish is speaking my language!!! I'll probably leave out the meat because I'm almost a vegetarian (is that even a thing?) but good to know I can add it in if I'm feeling carnivorous (I could never give it up for good!!)
