So, here’s how it’s going to work…every Monday, I will give you a suggested menu for the week. I will provide you with 5 entrees, 1 bundt cake suggestion, 1 other dessert suggestion and a bonus recipe (appetizer, brunch or lunch idea). I’m going to try and keep things simple, quick, easy and always seasonal. Of course, I’ll repeat recipes because that’s what we moms do…we repeat the things we know our family loves.
My goal is to get dinner on your family’s table fast every night. Love you all!
Day 1: BBQ Apple Chicken Sandwiches (in the slow cooker!)
You should double the chicken in this recipe and make twice as much (make 2 to 3 pounds instead) for Day 3. Just shred up the extra chicken and put it in the fridge until Day 3, then proceed with your sandwiches from there.
Day 2: Sausage and Provolone Pasta
Pick up 2/3 to 1 pound of Provolone cheese and use some for this recipe and save some for Day 5’s recipe. Also, you’ll use Parmesan cheese in both recipes too…just save the extra for Day 5. If you have any leftovers after this meal, save them to be a side dish with Day 5 as well.
Day 3: BBQ Baked Chicken Tacos
Use your leftover chicken from Day 1 in your tacos for the night.
Day 4: Mexican Risotto (it can be vegetarian or not!)
This meal is really versatile! You can make it per the directions as a meatless dish or you could serve it alongside a baked chicken or grilled steak…or you could simply add in some ground beef seasoned with a tablespoon of taco seasoning or shredded chicken too. Very versatile!
Day 5: Provolone Stuffed Meatballs (this is a One Pound Meal!)
This recipe is a One Pound meal (meaning you can use beef, chicken or turkey in it). Don’t forget to use up your Provolone and Parmesan from Day 2. If you don’t want to serve your meatballs with pasta, you can simply eat them by themselves with a big green salad.
