Happy Monday everyone! This week, we’ll be repeating some key ingredients: corn, apples, broccoli, and bacon. I’m keeping things simple, I’m keeping things September (hello apples!) and I’m keeping things fast. Enjoy your week!
Day 1: Meatball Sliders are incredibly delicious and just wait until you see how simple they are! If you’re not in the mood for a slider, simply make some pasta to go along side it. There you go…a pasta dinner instead. You will flip over this sauce. Flip!
Day 2: Slow Cooker Cornbread Chicken Enchiladas are delicious! I was super impressed with how easy this enchilada dinner was to make. Hello?! Slow cooking enchiladas with a yummy cornbread topping…that’s the perfect weeknight for me!
Day 3: Pasta with Bacon and Corn is my very favorite meal. Period. I’ve said it a million times on this blog. This is my favorite supper. You will use some more of your frozen corn in this meal along with yummy bacon. We love turkey bacon but you use whatever you like.
Day 4: Ultimate Butternut Squash Soup is such a simple fall supper. If you think your family needs a little more oomph than just soup for dinner, then just whip up a few extra meatballs on night one and there you have it…a little more oomph. I think this tastes like fall in a bowl.
Day 5: Mac and Trees will have your kiddos eating broccoli faster than you can serve it. Don’t call them broccoli moms…call them trees. 🙂
Bundt Cake #54 Caramel Apple Cider is the perfect dessert for a September supper. Your house will smell like fall and your tummy will thank you. Yummy!
S’mores Cookies are super easy! I’m talking, you can make these in minutes…and they’re delicious too! You will love this little recipe!
Broccoli and Grape Pasta Salad is our bonus recipe this week! This is a great lunch or light supper. Instead of buying various sizes of pasta, use your leftover penne from your Mac and Trees when you make this recipe. This is a great recipe to have on hand.
I hope everyone has a fantastic week! I love you all!

We are hosting a dinner for the inside linebackers on my son's football team this week. I was just sitting here pondering what to make. I think the meatball sliders might just be the winner. Although I may serve them on sub rolls just to fill them up a bit more. As always, thanks for the inspiration! My hubby loves it when I try out new Shay recipes. 🙂

Hi Shay!
I have tried several of your recipes and have loved them all. Question: What brand of turkey bacon do you use? Thanks for sharing all your great recipes!

Just wanted to say thanks for the help!! I'm sitting here making a meal plan and after last weeks flops I just needed tried and true meals sure to please my family and my tummy!! Then I knew, it's time for mix and match mama's meal plans. And, I can vouch for the slow cooker cornbread enchilada, made it last winter? or fall, and mmmm soooo good!!!
