Good morning Monday! Can you believe that it’s the last full week of September?!?! It just goes by so quickly!
This week, I’m making shredded chicken and tortillas the star ingredients. Whether you make one or two recipes or all eight…you will find them easy, quick and yummy for busy nights.
If you plan on making another chicken dish this week, you should cook two (or three) times as much chicken and save the extra for the recipes on Day 2 and/or Day 4. I would cook the chicken in the slow cooker all day for this recipe, then shred everything up and put the extra chicken in a plastic container in your fridge. Then on the other nights, you just pop out your shredded chicken and proceed. Easy!
Sarah’s Pinwheels are our bonus recipe of the week! If you have leftover tortillas from Days 2 or 5, whip up these little appetizers. You will be popping these guys in your mouth right and left! Insanely delicious!

Thanks Shay! I meal plan EVERY week and this is giving me a little break! By the way, I tried your mac and trees last week and wow! I added shredded salsa chicken and saute'd onions instead of broccoli(had it as a side instead) and it was so good.

This menu looks great! Since I tried how you cook your chicken a while back ago, it has really changed how I view making chicken recipes that require it cooked. I once dreaded those recipes because it took so long but not anymore!
