This is what I call a Monday Night Meal. It’s so simple, so fast, such a no-brainer, that it’s the perfect supper to whip together on a Monday night. And your family will love it :).
Shopping List
1 pound of ground beef ( or use ground turkey or ground chicken)
1 onion, chopped
1 (10 oz) can of enchilada sauce
1 can of cream of mushroom soup
1 cup of Cheddar cheese, shredded
2 cups of crushed tortilla chips
Extra Virgin Olive Oil (EVOO)
Chopped green onions to garnish
(This meal can easily be doubled and prepared in a 9×13″ pan.)
Preheat your oven to 350 degrees.
Grease (I use Pam) a 8×8″ baking dish. Set aside.
In a skillet over medium-high heat, brown your ground beef in a drizzle of EVOO. Once it’s browned and crumbly, stir in your onion and saute a couple of minutes. Stir in your sauce and soup and combine.
Transfer your ground beef mixture to your prepared baking dish. Top with your cheese and chips. Bake uncovered about 20 minutes or until browned and bubbly.
Remove from oven and serve.
Such a simple supper! Serve this with a big green salad and you’re done! Now, the casserole isn’t “set” like a lasagna or anything because there isn’t a starch in there to set it (like noodles or tortillas). When you serve this, it will be warm and bubbly and come out kind of like a really thick soup. We served ours on plates but you could totally serve yours in bowls.
Simple. Satisfying. Monday. Done.

I don't usually try recipes that used canned soup. Too much Campbell's as a child maybe? But this is sooooo good. I added some tortilla layers to give it some more substance and topped mine with sliced olives. Just mine, no one else in the family likes them.
