Who needs gingerbread men when you can have a chocolate gingerbread bar with frosting on top? Not me. These were delightfully festive without being complicated. The perfect holiday bar.
Shopping List
2 sticks of butter, softened and divided
1/2 cup light brown sugar
2 tablespoons water
1 egg
1 box chocolate cake mix
1 1/2 tablespoons ground ginger, divided
1 cup chocolate chips
1 to 2 splashes of milk
2 cups powdered sugar
Preheat oven to 350 degrees.
Grease (I use Pam) a 9×13 baking dish.
In a large mixing bowl, cream one stick of butter with your brown sugar. Gradually beat in water and egg. Beat in your chocolate cake mix and 1 tablespoon of ginger. Stir in your chocolate chips.
Pour batter into your prepared baking dish and bake 20 to 25 minutes.
Remove from oven and let cool completely before frosting.
To make the frosting, beat your second stick of butter with a splash or two of milk and your powdered sugar. Add more milk if it’s too thick or more powdered sugar if it’s too thin. Add in your remaining 1/2 tablespoon of ginger.
Frost cooled bars with your frosting. Refrigerate at least 30 minutes before slicing and serving (but they can stay in the fridge up to 2 days!)

Is it 1 1/2 tablespoons of ginger or teaspoons? In the frosting you mention teaspoon but in the ingredient list tablespoon. Just checking bc I have the bars in the oven now…hope they aren't too gingery. Lol! Thanks! Jill
