Hot Chocolate Cupcakes with Peppermint Cream Cheese Frosting!
These cupcakes are so simple and delicious…the perfect little party treat for all of your merry and bright nights!
This recipe makes 2 dozen cupcakes.
Shopping List
1 box of chocolate cake mix
3 tablespoons of instant hot chocolate powder
1/2 cup of vegetable oil
1 1/4 cups water
4 eggs
1 (8 oz) package of cream cheese, softened
3 cups powdered sugar
1 or 2 tablespoons milk
2 teaspoons peppermint extract
red food coloring
Peppermint Crunch, Candy Cane Marshmallows, Peppermint M&Ms or Candy Cane Kisses to garnish
Preheat oven to 350 degrees
Line 2 (12 count each) muffin tins with cupcake liners.
In mixing bowl, combine cake mix, hot chocolate powder, oil, water and eggs with electric mixer.
Pour batter into prepared muffin tins and bake 16 to 18 minutes or until toothpick inserted comes out clean.
Let cupcakes rest on counter in pan 5 minutes before removing them to a wire rack to finish cooling.
To make the frosting, beat your cream cheese, powdered sugar and milk with an electric mixer until smooth. Add more powdered sugar if your frosting is too thin and more milk if it’s too thick. Beat in your peppermint extract and a few drops of red food coloring. Beat until incorporated.
Frost cooled cupcakes with Peppermint Cream Cheese Frosting and garnish with your favorite Christmas candy.
