I would like to introduce you to the love of my life. This brownie.
I just kind of came up with this one day and then decided it was the best thing ever. Like ever. Ever. Ever.
For those of you who are coconut lovers, you will be obsessed with this. The good news is that in about 20 minutes, you too can have a love of your life as well.
Shopping List
1 box of brownie mix
1/2 cup vegetable oil
3 eggs
1 cup chocolate chips
1 (14 oz) can of sweetened condensed milk
2 cups sweetened flaked coconut
Preheat oven to 350 degrees.
In a mixing bowl, combine your brownie mix, vegetable oil and eggs with an electric mixer until smooth.
Pour your brownie mixture into a greased (I used Pam) 9×13 baking dish. Bake for 10 minutes. Remove pan from oven and sprinkle your chocolate chips over the brownies. Next, drizzle your sweetened condensed milk down over the top and then sprinkle your coconut over everything.
Put the pan back in the oven and bake another 10 to 15 minutes or until the coconut gets lightly toasted.
Allow brownies to cool before slicing and serving (if you can…I ate one really warm and it was delicious!).

Here is the status I posted on facebook (with a link of course!) after making these for Mother's Day – If you know what is good for you, you will NOT make these brownies! If you do, be sure to take them to a huge function where they will get all eaten up so you won't have any to take home. They are so irresistible and gooey and yummy that it would be setting yourself up for failure if you were to make them.
