The busyness of the holiday season might be behind us but there are lots of fresh foodie days ahead. I’ve switched out my pantry from apples, pumpkins, cinnamon and squash to bright greens like kale and spinach…lean meats like turkey and chicken, thrown in some lemon and other citrus fruits and we’re getting all settled into January. This month, let’s relax. Let’s enjoy the cold days and long nights. Let’s sit by the fire and read a book, let’s indulge in staying inside. My kitchen is full of soups, casseroles, slow cooker meals and simple desserts.
