Happy Monday! My sweet boy celebrated his birthday over the weekend, so we had a great one! Now…back to the week. Sigh. We knew Monday was coming. It seems to do that every seven days.
We’re making brisket tonight with smashed potatoes and then using the leftovers for tomorrow night’s meal! Let the slow cooker do all the work on Day 1 and you’ll be covered on Day 2 as well! Make sure you buy a bigger brisket than normal so that you have leftovers to use! (Buy a 4 to 5 pound one to get two meals worth of brisket.)
If you’re using your leftover brisket from the night before, then all you need to do is wrap it up in a tortilla with lots of salsa and your other favorite toppings. Easy! For the complete Brisket Taco recipe, click here.
My Mac and Trees can be made with bacon or vegetarian instead! Such a simple way to get your kiddos eating their broccoli!

Hi Shay! For some reason I can never post a comment on your other blog but I can on this one. Not sure why! Anyway, I loved Smith's party, my son turned 16 yesterday and I remembered all the cute theme parties I once did for him. At 16 he's not having any of that anymore – boo!
