I mean, hello?
I sent these bars out with Andrew to share with our friends at church (Smith wasn’t feeling well, so I stayed home with him), and I had 4 people text me that these were amazing! I had one friend who told me I should just stop at Bar 27 and make these bars over and over again instead of continuing on. She said it was like “a party in her mouth”. Love that!
And you know me…when I indulged in my piece I totally justified it as health food. There is peanut butter inside! That’s total girl math…peanut butter makes everything “healthy” ;).
I absolutely think you will love these bars too…
Shopping List
1 box of yellow cake mix
4 eggs
1 stick melted butter
1 box of powdered sugar (about 4 cups)
8 oz package of cream cheese, softened
1 cup creamy peanut butter
1 cup chocolate chips
1 cup creamy peanut butter
1 cup chocolate chips
Preheat oven to 350 degrees. Grease (I use Pam) one 9×13 inch pan. Set aside.
In a mixing bowl, combine cake mix, 2 eggs and melted butter. Spread in bottom of pan to form your “crust” layer.
In a second bowl, beat with electric mixer, powdered sugar, 2 more eggs, cream cheese and peanut butter until smooth. Next, stir in your chocolate chips.
Spread cream cheese mixture on top of crust mixture.
Bake 35-40 minutes until edges are brown and center set (it will still be slightly wobbly in the middle).
Cool on counter 30 minutes, then refrigerate 2 hours up to 2 days.
Slice into bars and serve.
Absolutely fabulous if I do say so myself! Peanut butter plus chocolate chips over a yellow cake mix crust…it really doesn’t get much better than that, right?

People were even sheepishly asking for some to take home with them, which is good because otherwise I would have eaten them ALL myself. Super easy recipe, too. A couple of questions- Do you bake your bars in a metal pan or glass? Do you cover them in the fridge? I made them last night and was worried about the condensation since they were still warm but covered them anyways. This morning I cut into them and I am worried they aren't cooked enough.

I do both. Most often glass, but metal and even disposable foil too. Yes, I always cover my food in the fridge! And they should be gooey but cut into bars nicely.
