Don’t these sandwiches look delicious?!?! And just wait until you see how simple they are to make! Andrew isn’t a big citrus person, so I wasn’t sure what he would think but he loved them! I loved that they cooked all day in my slow cooker and were ready and waiting on us after our busy day. The perfect weeknight dinner!
This recipe makes 4 sandwiches.
Shopping List
1 to 1 1/2 pounds of chicken breasts (frozen or defrosted, either way)
1 cup Orange Marmalade (found on the Jelly/Jam aisle)
1 1/2 cups of your favorite BBQ sauce
Burger Buns
Chopped green onions to garnish (optional)
Orange zest to garnish (optional)
In your slow cooker, layer the first 3 ingredients. Stir the marmalade and BBQ sauce together and make sure it’s all over your chicken inside the slow cooker. Cover and cook on low 7 to 8 hours or on high 3 to 4 hours.
When you’re ready to serve, remove the lid and shred the chicken right inside the slow cooker using two forks.
Top burger buns with the chicken mixture and garnish.
