Who needs Green Eggs and Ham when you can have Green Pancakes instead?
Since I know how much my kiddos love my cake batter pancakes, I decided to make a batch and turn them green for St. Patrick’s Day. Such a big hit! In fact, my kiddos loved it so much that they requested Green Pancakes the following day too.
Yummy, easy and green…that’s a Mama’s perfect St. Patrick’s Day treat!
Shopping List
1 box of white cake mix
1/2 cup flour
2 eggs
2 cups milk
1/4 cup vegetable oil
a few drops of food coloring
Preheat your griddle to medium-high.
Combine all ingredients in a large mixing bowl with a whisk.
Ladle pancake batter on to greased (I used Pam) griddle and let sit until you see bubbles rise up. Once they get bubbly, flip them over and cook the other side. It only takes about 4 minutes to cook them total.
Keep ladling and flipping your pancakes until the batter is gone. This recipe yields about 18 pancakes.
Top pancakes with your favorite maple syrup.

I made these last year for my little family and they were a big hit! I topped them with whipped cream and a few lucky charms marshmallows 🙂 We love St. Patrick's Day!
