I know I sound like a broken record…because every.single.time I make a Neiman Marcus Bar, I say that particular version is my favorite…but people…this one really is my favorite.
This is like coconut pie but simpler. This is like coconut pie but dare I say, better. This is like coconut pie…enough said. Make them.
Shopping List
1 box of white cake mix
4 eggs
1 stick melted butter
1 box of powdered sugar (about 4 cups)
8 oz package of cream cheese, softened
2 cups sweetened flaked coconut
Preheat oven to 350 degrees. Grease (I use Pam) one 9×13 inch pan.
In a mixing bowl, combine cake mix, 2 eggs and melted butter. Spread in bottom of pan.
In a second bowl, beat with electric mixer, powdered sugar, 2 more eggs, and cream cheese. Stir in your coconut. Spread coconut mixture on top of crust mixture.
Bake 35-40 minutes until edges are brown and center set (it will still be slightly wobbly in the middle).
Cool on counter 30 minutes, then refrigerate 2 hours or up to 2 days.
Slice into bars and serve.

I made these this weekend for Mother's Day and left a big serving plate of them for the volunteers at church. At the end of the day…the plate was practically licked clean!

These are in the oven now! I slightly tweaked it to add 1tsp of coconut extract and 3/4 cup dark chocolate chips. Mounds bars, perhaps? Thanks for your recipes! I made the lemon version last week (with the juice of the lemon as well). Delicious!
