My mom has recently become obsessed with all things cherry pie. For years, she didn’t think she liked cherry pie but all of a sudden, she has realized that it’s like the best thing ever. And I couldn’t agree more!
The best part about my Cherry Pie Bars…you don’t have to fuss with making pie crust. I found this fabulous (and very versatile!) recipe over on Mom on Timeout. You can totally mix and match this method a million different ways…use peaches, apples, blackberries and such and make it your own.
To me, this just says summer. And bonus…this recipe has oatmeal in it, so I completely justify this as a breakfast bar too :).
Shopping List
1 box of yellow cake mix
2 1/2 cups quick cooking oats
3/4 cup butter, melted
1 (21 oz) can of cherry pie filling
Preheat your oven to 350 degrees.
Grease (I used Pam) a 9×13 baking dish, set aside.
Mix cake mix and oats in a large bowl. Add in your melted butter and combine until nice and crumbly.
Press half of your oatmeal mixture down across the bottom of your prepared baking dish. This is your “crust” layer. Spread your pie filling down over the crust. Sprinkle remaining oatmeal mixture down over the top of the cherry pie filling and lightly press the oatmeal mixture down (I lightly used the back of a spatula).
Bake 18 to 20 minutes or until lightly browned.
Cool slightly and then cut into bars.
Such a simple little bar. Love it!

Yummy! I have made this a few times this summer and it's always a hit. This time, I used a lemon cake mix and blueberry filling. Simple & delicious!
