This little bar has such potential! I originally created it because it would be perfect for a summer holiday (it’s kind of red, white and blue, right?) but then when I served it to my friends, they loved it because it can totally work for breakfast too (they were loving it with a cup of coffee on the side).
The best part about this bar is that you can mix and match it for your family. I used raspberry, strawberry and blueberry jam but you could use all of one type of jam or just two of them instead. Make it your own. I’m pretty sure you will love every bite.
One jar of preserves is about 18 ounces, so you will need about 1 1/2 jars for this recipe of your favorite preserves or jams.
Shopping List
1 box yellow cake mix, divided
1 egg
1/2 cup butter, melted plus another 3 tablespoons butter softened
1 cup of raspberry preserves
1 cup of strawberry preserves
1 cup of blueberry preserves
Preheat oven to 350 degrees
Lightly grease a 13×9 inch baking dish. Reserve one cup of cake mix to the side; mix remaining cake mix, 1 egg and half a cup of melted butter. Mix well and then pat into prepared pan to form a “crust” layer.
Spoon your jams and/or preserves down over the top of your crust layer. (This doesn’t have to be a smooth layer, the jam will melt and spread out as it bakes. Just lightly dot the different jams across the top.)
In a small bowl, combine reserved cup of cake mix and softened 3 tablespoons of butter. Crumble over cake.
Bake 20 to 25 minutes or until lightly browned.
Allow bars to cool before slicing and serving.
My pregnant friend Megan texted me later the next day and was still raving about the bars…you know a bar is good when a pregnant girl is still thinking about it :).
