I found this recipe in my Celebrate magazine last month and instantly fell in love. It just looked so fresh and light and I thought it would be the perfect little summer side or even simple dessert. And after I made it, I knew it would be a staple at our house all season long.
Strawberries, blueberries, raspberries, watermelon with a little orange extract, honey and fresh mint…hello wonderful.
This recipe makes enough to feed a crowd and can be easily doubled if necessary. I made mine 12 hours in advance and kept it in the fridge but you could serve it immediately too.
Shopping List
1/3 cup honey
1 tablespoon orange extract (or orange liqueur)
2 tablespoons fresh lemon juice
2 cups fresh blueberries
2 cups cubed watermelon
2 cups chopped fresh strawberries
2 cups fresh raspberries
Fresh mint to garnish
In a small bowl, mix together the honey, orange extract and lemon juice. Set aside.
In a large bowl, combine all of your fruit. Pour your honey mixture down over all of the fruit and toss until combined. Garnish with mint.
Serve immediately or refrigerate for a few hours.
So simple. So light. So fresh. So summer.
