Two years ago when my cousin Brooke got married, she gave each of her bridesmaids a pie plate and this recipe for Lemon Blueberry Cream Pie. She told us that it was her fiance Austin’s favorite pie and that she made it all the time.
Well…let me just say this. Austin is a really smart guy…first of all, he picked my sweet cousin as his bride and second of all, he loves this pie…because it’s freakin’ awesome!
This is the perfect summer pie! It’s a no-bake pie, so you just put the ingredients together and go…so simple. Plus, it’s light and fresh and the perfect ending to a summer night. Thanks Brooke!!
Shopping List
1 pre-made graham cracker crust
1 (8 oz) package of cream cheese, softened
1 (14 oz) can of sweetened condensed milk
1/4 cup powdered sugar
1 (3 oz) package of lemon instant pudding mix (do not prepare, you just need the powder)
2 teaspoons lemon zest
1/2 cup fresh lemon juice
1 pint fresh blueberries
2 tablespoons blueberry preserves or jam
Whipped Cream to garnish
In a large mixing bowl, beat your cream cheese, milk and powdered sugar with an electric mixer until creamy. Beat in your lemon pudding mix, lemon zest and lemon juice until just blended.
Pour half of your lemon mixture into your prepared pie crust.
Stir together your fresh blueberries with your blueberry preserves in a small bowl. Pour the blueberry mixture down evenly over the top of your lemon pie layer. Top the blueberry layer with the other half of your lemon mixture.
Chill pie at least two hours (you can even chill it overnight!). Remove pie from fridge and cut into wedges. Serve with a garnish of whipped cream.
This is the perfect dessert to make with kids…no oven, no knives, just yummy goodness.

My pie wasn't as pretty as your pie (maybe because I only waited three hours to serve it) but it was delicious. It is a great summer dessert. It was the perfect end to our outdoor dinner of Ina Garten's grilled salmon and sautéed asparagus and snap peas.

This pie was delicious. I even made it a second time, but I mixed and matched to turn it into a strawberry cream pie the second time around. Switch out the lemon pudding and lemon juice for vanilla pudding and a dash of vanilla extract. Then I used freshly picked strawberries and strawberry jam…..amazing!! 🙂
