I just love making quick breads (you know…the breads that don’t require yeast).
They’re easy, they’re moist, they’re fast and they’re always yummy.
You should whip this little bread up and have some for breakfast…or dessert…or a snack…or just because.
Shopping List
1 stick of butter, melted and cooled
1/3 cup sugar
1/3 cup light brown sugar
2 eggs
5 ripe bananas, coarsely mashed
1/2 cup sweetened condensed milk
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking powder
1 1/2 cups blueberries
1 1/2 cups blueberries
Preheat oven to 350 degrees.
Spray (I used Pam) one standard loaf pan.
Cream butter, 2 of the bananas and sugar in a large bowl using an electric mixer.
Mix in eggs. Then mix in the remaining 3 bananas and sweetened condensed milk. Do not over-mix the batter.
In a separate bowl, combine the flour, salt, and baking powder with a fork or whisk.
Fold the banana mixture into the bowl with your dry ingredients. Do not over-mix! Stir in your blueberries.
Pour batter into your prepared pan.
Bake 55 to 60 minutes or until a toothpick inserted in the middle comes out clean. Remove pan from oven and let bread rest in the pan about 45 minutes. After that, flip bread out onto a serving plate.
Slice bread and enjoy.

Great minds think alike! Last weekend I decided to add banana to my blueberry muffins and loved them. I still have some tweaking to do to get them to rise a little more. I LOVE that you used sweetened condensed milk! Gets me every time!

Oh.my.goodness…this was my FAVORITE recipe of yours! I am a banana bread connoisseur! Before I tried this recipe, I just did NOT believe that ANY recipe could compare to Paula Deen's banana bread…I love Paula Deen, but this recipe beat hers!
