Sometimes, when we’re looking for something quick and easy to pull together for dinner, we’ll have nachos.
I love Nacho Night because it’s so simple and we can use whatever random mix of ingredients we have in the fridge. I also love this because it’s the perfect One Pound meal…you can use ground beef, ground turkey or ground chicken.
For the Shull four, this is the perfect Friday night meal…nachos, popcorn and a movie with the kids…love it!
This version below serves four.
Shopping List
1 pound of ground beef
1 (1 oz) packet of taco seasoning
1 (10 oz) can of Rotel Tomatoes
1 (15 oz) can of black beans, rinsed and drained
a few handfuls of your favorite tortilla chips
1 1/2 cups cheddar cheese, shredded
Chopped green onion, chopped red onion, pickled jalapenos, and/or avocado to garnish
Preheat your oven to 400 degrees.
Spray a pie plate or an 8×8 baking dish with cooking spray. Set aside.
In a large skillet over medium-high heat, brown your ground beef until nice and crumbly. Stir in your taco seasoning, Rotel tomatoes and black beans.
In your prepared baking dish, layer your tortilla chips across the bottom (use as many as you like). Pour your ground beef mixture down over the top of your chips. Sprinkle cheese on top of everything and place the baking dish in the oven.
Bake about 10 minutes or until the chips appear lightly brown and the cheese is bubbly and melted.
Remove from the oven and garnish with your favorite toppings.

I'm a big fan of nacho night as well! I try to whip up a quick beschamel sauce (cheese sauce) and my family dives in. This is a no-brain dinner and I love it!
I've also served nachos at large slumber parties and used the crockpot to help make large servings. Super easy to feed a ton of kids with zero effort!

Ooh, I found this right on time. My daughter’s birthday is coming up and she is absolutely obsessed with nachos. I don’t think a day goes by when she doesn’t request nachos for dinner. LOL! These nachos sound delicious and I think I may surprise my daughter with these. She’ll be so happy to hear that we’re eating nachos rather than my usual response of “No, we’re not eating nachos tonight.” LOL.
