Need a quick little weeknight supper? My Skillet Tacos are the perfect solution!
I whip these up on nights when I want to get dinner on the table fast. I love that I can use either ground beef or ground turkey…plus, I can use wheat, corn, flour or gluten-free tortillas.
Simple. Quick. Yummy.
Shopping List
1 pound ground beef
1 onion, chopped
1 green bell pepper, chopped
2 tablespoons chili powder (or a 1 oz packet of taco seasoning)
1 (16 oz) can of chili beans (I used Bush’s Mild Chili Beans)
1 (10 oz) can of Rotel Tomatoes
8 tortillas
Shredded Cheddar Cheese to garnish
Extra Virgin Olive Oil (EVOO)
This recipe serves 4 adults.
In a large skillet over medium-high heat, brown your ground beef in a little drizzle of EVOO. Once it’s browned and crumbly, stir in your onion and green bell pepper along with your chili powder. Saute about 3 or 4 minutes then reduce heat to low and stir in your beans and tomatoes (do not drain either).
Simmer your mixture over low about 10 minutes.
To serve, spread a little ground beef mixture down over each tortilla and garnish with a sprinkle of cheese.
Dinner is done…and really good too!

We eat tacos about once a week over here. We already put beans and tomatoes in them about 1/2 the time, adding in the peppers and onions will shake them up a bit! 🙂
