Meal Planning Monday #51

Goodness!  It’s the first day of school today!
Insert me sobbing here.
Okay…I’m better now.
Not really.
But I need to keep it together for Kensington.

This week is like many of yours…busy.  We are going to get into the groove of school, we have Meet the Teacher this week for Smith’s Pre-K class, we have ballet and other after school things too.  We’re just back to being busy.  This means, we have no time for fussing over a complicated dinner!  
This week’s menu is dedicated to the busy back to school families out there :).

Andrea’s Pulled Pork is what I suggested you make for the first day of school.  Four ingredients, a slow cooker and dinner is done.  So simple and absolutely delicious too!
At our house, Spaghetti and Meat Sauce is always a huge hit.  I used ground turkey with this version but you can absolutely use ground beef instead!
This Crunchy Tex-Mex Chicken takes boring old chicken breasts and jazzes it up.  Delicious and simple!
Erika told me about Pizza Joes years ago.  This is a Sloppy Joe that tastes like a pizza…how brilliant is that?!?!
How yummy does this Enchilada Chili look???  And it’s ready in minutes!  Again, we used ground turkey but please feel free to substitute with ground beef.
Our bundt cake of the week?  Well, I think it’s perfect for back to school time…
My Peanut Butter Bundt Cake.  Doesn’t peanut butter and back to school just go hand in hand?  I think so.
I think Erika makes my Nutella S’more Pie Bites once a week.  These are so simple to whip up on a busy weeknight and listen…they taste out of this world!  If you haven’t made this little dessert, you should.  Like now.
And you need to end your week with my Apple Cinnamon Pull-Apart Bread.  Such a yummy breakfast for you and your family.
Lots of love this week to all of you mamas sending your kiddos back to school!  It’s such a bittersweet time for me.  Praying this morning for all kiddos headed back to school.

    Hi! I'm kind of new to your blog. I realized that you posted only 5 recipes. Do you eat out the other two days or do you eat leftovers? Also it seems like you eat alot of meat/chicken as much as I would love to do that each week it can get expensive. Any tips?

    Hi Sharon! Welcome to my blog :). Yes, we typically eat at home Sunday through Thursday and then eat out on Friday and Saturday nights. And yes, we are meat eaters over here (especially my husband!), so almost all of my entrees have meat as the protein. Thanks for stopping by!
