Instead of making Halloween cupcakes this year, I’m making Halloween Whoopie Pies.
A fun little alternative for all of those school parties, weekend get togethers and other festive occasions.

Shopping List
1 box yellow cake mix
1/2 cup veggie oil
2 eggs
1/4 cup water
store bought vanilla frosting
1 cup candy corn
Preheat oven to 350 degrees
Combine cake mix, oil, eggs, and water in bowl.
Drop by 2 tablespoons onto lined cookie sheet (leave about an inch between each cookie)
Bake 8-9 minutes
Cool on pan 5 minutes, move to wire rack and cool 15 more minutes.
While your cookies are cooling, add your candy corn to your store bought frosting and mix through.
Take one cookie and place a tablespoon or so of the candy corn frosting in the center. Press another cookie on top (this will spread the icing out to the edge).
This recipe makes about a dozen finished whoopie pies.

Very cute for the season! But I have to say, these seem more like inside-out cupcakes, as true whoopie pies have a marshmallow fluff filling (not icing). BUT they are adorable and obviously easier for a busy mom to make!

CANDY CORN! it's not my favorite, but I HAVE to have it each year. For fall's sake!! 🙂

Just made these for Halloween and they were awesome and very easy! I used cream cheese icing instead of vanilla though and it was delicious!
