Good morning! It’s Monday…only 10 days until Christmas. Oh my goodness! Where has the time gone?!?!
If you’re looking for me this morning, I will be on Good Morning Texas whipping up some yummy recipes that can fit inside a muffin tin. All 3 of these little recipes would make great appetizers for holiday parties, light suppers (just serve with a big green salad) or a fun little lunch.
And to make the Mini Chicken Pot Pies, all you do is this:
Preheat oven to 375 degrees.
Spray your muffin tin with Pam. Open one can of Grands Biscuits. Take each biscuit (there are 8) and flatten them out just a bit (about five inches). Place each flattened biscuit down inside of the muffin tin making sure it comes up the side (you’ll only use 8 of your 12 muffin tin spaces).
In a mixing bowl, combine a cup of cooked and shredded chicken with one can of cream of chicken soup and two cups of a frozen vegetable medley. Spoon chicken mixture into each biscuit cup and then lightly fold the edges of the biscuit down around the chicken mixture.
Bake about 20 minutes. Remove from oven.
