‘Tis the season for citrus!
Right now, citrus fruits are in season, so it’s the perfect time to marry them with other flavors for dinner. Since orange is my favorite, I decided to put an orange spin on a chicken tostada…so good, so easy and so eaten up by my family. You could also use corn, flour, or crunchy taco shells instead of a tostada…whichever you have on hand.
This recipe serves four adults.
Shopping List
1 pound of cooked and shredded chicken (click here to see how I get mine)
1 cup fresh orange juice (about 2 juicy oranges)
1 cup of your favorite BBQ sauce (I used Sweet Baby Rays)
about 8 green onions, chopped
4 to 6 tostada shells
Orange slices to garnish
In a small bowl, combine your orange juice and BBQ sauce until combined. Pour this sauce over your cooked and shredded chicken. Scoop out a generous portion of chicken on to each tostada shell and sprinkle a few green onions on top. Garnish with an orange wedge or two.
I mean…how easy is that?!?! This is the perfect weeknight meal! If you’re feeling extra fancy, you could add a little shredded Pepper Jack cheese on top too.
A fast weeknight supper…with a citrus twist.

These look SOOOOO good! Now take out the pretty oranges, and add some big blobs of queso, guac, and sour cream….and I'm in.

This sounded so good, but I didn't have any sort of taco shells, so I did a little "mix and matching" of my own! I made the citrus chicken in the crockpot, then made pizza dough and turned it into calzones. We loved the flavor so much – it had just the right amount of citrus-y in it! Maybe someday I'll make it the right way 🙂 Thank you!
