Hello there!
I was trying to think of a Sloppy Joe that I could serve on St. Patrick’s Day and thus…the Jolly Green Joe was born.
Ground turkey, spinach, green bell pepper, green chiles, green onions, avocado…all jolly and green…and perfect for a St. Paddy’s Day supper (or any old night for that matter!).
This recipe serves four adults.
Shopping List
1 pound ground turkey
1 (10 oz) package frozen spinach, thawed and drained of excess water
1 green bell pepper, chopped
1 (4 oz) can chopped green chiles
1 1/2 cups green chile or tomatillo salsa
8 to 10 green onions, chopped
1 avocado, pit removed and sliced into pieces
Extra Virgin Olive Oil (EVOO)
Salt and Pepper
Burger Buns
In a large skillet over medium-high heat, brown your turkey in a drizzle of EVOO until browned and crumbly. Add in a liberal pinch of salt and pepper. Stir in your spinach, bell pepper, can of green chiles, salsa and onions (saving a few to garnish). Reduce heat to medium and let simmer about 5 minutes or until everything is heated through.
Take each burger bun and top with a generous portion of your ground turkey mixture. Garnish with pieces of avocado and a few remaining chopped green onions.
That’s it! A simple little ground turkey supper with a St. Paddy’s Day spin.
