Happy Monday! Here in North Texas, we’re having our first snow day of the year. Woohoo!! Schools are closed, many businesses shut down…we stay in and enjoy the cozy day.
In honor of this last week of February and our snow day, this week’s recipes are all hearty, hot and just right for snowy suppers.

My Tex-Mex Chicken and Rice Soup is prepared in the slow cooker…so all you do is add everything in first thing in the morning and then enjoy that evening.
Turkey and Spinach Lazy Lasagna is made with ground turkey and shell pasta…it has all of the bells and whistles of a complicated lasagna but it’s so simple to make.
Ahhhh,,,Breakfast Joes…why is it that eggs taste even better at night for dinner? On a cold night, a cozy breakfast for supper is totally up my alley!
A snow day equals Andrea’s Baked Potato Soup. End of story.
And end your week with a yummy Italian Brisket Sandwich…it cooks in the slow cooker all day and delivers a fabulous meal at suppertime.
