Birthday Menu!

Today is the birthday of the man everyone loves at our house :).  Happy birthday to my sweet husband Andrew!
In honor of his birthday, I present you with Andrew’s very favorite meal…I bet your family will love it too!
Andrew loves any kind of roasted vegetable as a side.  On most nights, we roast either cherry tomatoes, asparagus, cauliflower, broccoli or…this kale for a side dish.  Roasted veggies are the easiest side around!
Hands down, without a doubt, there is no exception…Andrew’s favorite supper is my meatloaf…or to really fancy things up, this Coach’s Stack.  This is Texas Toast with mashed potatoes, meatloaf, yummy sauce and friend onions on top.  And truth be told…it might look a little fancy but it’s really simple to pull together.  He requests this for his birthday every year (and many times throughout the year too!).
For dessert, we’ll stick a candle in my Cherry Berry Cobbler and call it a party :).

    Happy Birthday to Andrew! Have made your Mom's meatloaf several times. I made the cobbler last week, but used strawberries instead of cherry. Totally delicious! Have also made it as cherry, blackberry, & blueberry. Going to make it as peach next time I make it.

    First….have a great celebration with your hubby! Second…I just looked at your roasted kale..how have I missed this?? I had no idea it would keep for 5 days after being cooked. I love it with eggs but never have time in the morning!!
