Meal Planning Monday #81

Hello Monday.
I hope you had a fabulous weekend…and I hope your Monday runs smoothly too.  Don’t fret over what to make for dinner, I have you covered :).

If you’re looking for a ground turkey supper, my Spinach and Sun Dried Tomato Joes should be on your menu.  It’s like a meatball but in Sloppy Joe form.

Before summer begins, I thought I’d sneak one or two more casseroles into our MPM (because let’s be honest, no one wants a casserole during the dog days of summer!).  My Sweet Potato Shepherd’s Pie is a great meat and potatoes supper for your hungry people.

Buffalo Chicken Tostadas…instead of Tex-Mex flavors on your tostada, switch things up with Buffalo Chicken instead.  Such a fun departure for taco night!

My favorite kind of slow cooker meal…a brisket one.  At the end of the day, you open the lid and dinner is done.  Italian Brisket Sandwiches should be on your menu for this week!

Risotto is a really easy supper to make on a weeknight.  You just add a bunch of stuff to one pot and dinner is done.  Simple!!  I love, love, love corn in recipes (if you’ll notice, every time I say “one of my very favorite recipes” corn is in it), so my Corn & Bacon Risotto is something we like to make often.  This is something kiddos eat up as well!

Our bundt cake of the week is my Cherry Limeade.  Is it summer yet???

And if you need a bonus recipe for breakfast this week…

Happy Monday!
