Growing up, we had quiche for dinner several times a month. Quiche plus a green salad and dinner was done for my mama!
Now that I have a family (who loves eggs!), we tend to eat quiche for dinner too. Plus, whenever I have overnight guests or need a yummy breakfast or brunch, quiche is typically the answer.
This quiche is filled with roasted tomatoes…and since we’re big carnivores over here, we also added browned breakfast sausage. That being said, you can omit the sausage and keep this vegetarian if you like. So many mix and match possibilities! Enjoy!
Shopping List
1 pint of cherry tomatoes
Extra Virgin Olive Oil (EVOO)
salt and pepper
4 eggs, lightly beaten
1 cup of milk
10 green onions, chopped
2/3 cup shredded Swiss cheese
2/3 cup shredded Cheddar cheese
16 oz of browned breakfast sausage (I browned up Owens original pork sausage), optional
1 uncooked pie crust fitted to a pie plate
Preheat oven to 400 degrees.
On a baking sheet lined with foil (for easy clean up!), place your cherry tomatoes. Drizzle down a tablespoon or so of EVOO plus a healthy pinch of salt and pepper. Add to hot oven and roast about 15 minutes.
Meanwhile, in a large mixing bowl, combine your eggs, milk, onions and cheeses with a whisk. Set aside.
Once the tomatoes are finished roasting, reduce oven temperature to 350 degrees and then add all of the tomatoes to the bottom of your pie crust. If you’re using sausage, add your browned and crumbly sausage on top of tomatoes. Next, pour your egg mixture on top of the tomatoes and sausage.
I typically place my pie plate on a baking sheet to make it easier to get my quiche in and out of the hot oven. Bake your quiche about 45 minutes or until the center is nice and set. Remove from oven, slice into pie wedges and serve.
Quiche night is always a hit at our house (and it’s a hit at breakfast and brunch too!).

I wonder what I may have done differently as the egg didn't set up for a very long time. I've double checked the ingredients many times. It was as if there was too much water. Has that every happened for you? I did use a glass pie plate, maybe that was the issue? Wonder if there was something else too I did wrong.

That's ok. It tastes better today. It's a bit brown on top as I baked it for at least double the time…like an hour and a half. We will try it again!
