What is better for summer entertaining than a shortcake?
Nothing.
You make it in advance, you can make it either individual or one large one to serve family style and it pairs nicely with anything from the grill or eaten on a patio. Plus, shortcakes are super simple to assemble!
If you can’t get to Hawaii this year, you can certainly bring the flavors to your dessert. I cubed pieces of pound cake for this version but you can certainly use cubed pieces of angel food cake too. Just head to your bakery (or freezer department!) and grab either one…then go home and assemble. Enjoy!
This recipe serves 10 to 12.
Shopping List
1 pound cake, cubed into bite sized pieces
1 (16) oz container of Cool Whip, defrosted just a little bit
1 (15 oz) can of crushed pineapple (no need to drain)
1 1/2 cups macadamia nuts, lightly toasted
2 cups sweetened flaked coconut, lightly toasted
You can use either one large trifle dish or 10 to 12 individual dishes for assembling and serving.
Layer in your dish(es), cubed pound cake, a little bit of Cool Whip, a little pineapple, some macadamia nuts, a sprinkle of coconut and repeat three times.
Finish with a little more Cool Whip and a garnish of toasted coconut.
That’s it!
I like to make my shortcakes 24 hours in advance. The longer they sit in the fridge, the better they are. I would recommend at least 4 hours in advance up to 24.
