Meal Planning Monday #85

This is one of my favorite weeks of the year!  I don’t know about you…but as soon as Memorial Day weekend hits, it’s summer in my world.  The week leading up to Memorial Day signals the end of spring and the beginning of everything wonderful about summer…staying up late, eating outdoors, swimming, baseball, homemade ice cream, fireworks and watermelon.  I love the beginning of summer!
Later on this week, I’ll show you my suggested Memorial Day Menu and I’ll feature my favorite recipes from the grill.  Today though, I’m wrapping up recipes that are perfect for busy mamas trying to get supper on the table after a busy day of school, homework, sports and such…I don’t know about you, but I’m ready for school to end and summer to begin.

My Chipotle Corn Chicken is prepared in the slow cooker.  All you do is add it to rice and then dinner is done!
Erika told me that the other night she made my Lobster Rolls with fresh lump crab meat and they were so good!  This is the kind of supper meant for crazy, busy weeknights…you will have it prepared in minutes!
We typically use a chicken sausage for  my Crispy Potatoes and Sausage but you could use a pork or turkey sausage too.  Add some roasted veggie on the side and dinner is complete.
Lemon Parm Pasta…trust me, your family will love this light pasta supper (and you’ll love how fast it comes together!).
My Cheddar Beer Burgers are one of my very favorite burgers to make.  Nothing says the Friday of Memorial Day Weekend like a burger…make yours a Cheddar Beer Burger!  
And our bundt cake of the week…

    My husband made the coconut lime Bundt cake for me for Mother's Day and it was delicious. Tastes just like summer.

    The coconut lime is one of my favorite bundt cakes. I also made a lemon coconut one time too and that was really good.
