I don’t know about you…but meal planning was the last thing on my mind yesterday. We typically spend our Memorial Day out by the pool with family and friends…but this year, it rained all day long, so we had a cozy indoor celebration with just my little family. Maybe next weekend the sun will come out for us? I’m ready to enjoy the pool and time outside!

We make these Spinach Burgers all.the.time. Kensington is our burger obsessed kid and she calls these “meatball burgers”. Spinach and dry onion soup mix give these a yummy meatball flavor right off the grill.

I’m thinking Grilled Pizza should be on your menu this Friday. Once you start grilling your pizzas, you’ll be hooked! We made our dough from scratch but you can totally buy a pre-made dough too.
The very first entree I ever blogged (almost 4 years ago!) was this Mexican Risotto. We like to serve it in the summer because it’s a vegetarian dish or a nice accompaniment to grilled chicken, fish or steak.
