Mmmmm…looking for a quick weeknight salmon supper? Try my Salmon with Avocado Chive Mash. Big flavors, little work. Enjoy!
This recipe serves four.
Shopping List
4 (6 oz) salmon fillets
1 1/2 tablespoons Old Bay Seasoning (or your favorite fish seasoning)
2 avocados
about 1/4 cup snipped chives (plus more for garnish)
5 or 6 chopped green onions
1 tablespoon fresh lemon juice
Salt & Pepper
Preheat oven to 400 degrees.
Line a cookie sheet with foil and lightly spray with Pam. Set aside.
Take each salmon fillet and sprinkle Old Bay Seasoning (found in a yellow tin on the spice aisle) or your favorite fish spice down on both sides. Sprinkle a little salt and pepper over each fillet too. Place on lined cookie sheet and pop in the oven for about 12 to 15 minutes, flipping fillets over halfway through cooking time.
Meanwhile, in a bowl, mash your avocados with a potato masher or wooden spoon. Stir in snipped chives, green onions, lemon juice and a liberal pinch of salt (I love sea or Kosher salt).
When your salmon has been cooked to your liking, remove from oven and top with your avocado chive mash. Garnish with a few more chive snips and serve. (You can squeeze a little more lemon down on top too if you like).
Super simple, super quick, and super delicious.

I usually use Paul Prudhommes blackened fish seasoning on my salmon. I'll have to try old bay next time. Looks Delish!
