Here’s the funny thing…I probably wouldn’t consider myself a “corn” person. However, corn is the star in all of my favorite recipes…
So, all evidence points to me being quite the corn person.
In honor of those precious little niblets, I made a sweet corn relish and put it on top of my burger…with goat cheese too (because goat cheese and I are having a moment).
This is the burger you should make this weekend.

This recipes makes four (half pound) burgers.
Shopping List
2 pounds of ground beef
2 tablespoons steak seasoning (we used Montreal Steak Seasoning)
2 cups corn niblets (about 2 or 3 cobs scraped or you can defrost frozen niblets)
1 red bell pepper, chopped
1 (4 oz) can of chopped green chiles
about 8 green onions, chopped
6 ounces of goat cheese, crumbled

Burger buns

Preheat your outdoor grill or indoor grill pan over medium-high heat.
Add about two tablespoons of your steak seasoning to the ground beef. Divide mixture into four sections and make four patties (make sure to press down each patty a little in the center to avoid the “burger bulge” when they grill).
Add your burgers to the grill and begin grilling (we do about 6 minutes or so each side).
While your burgers are grilling, make your relish. In a bowl, combine corn, chopped bell pepper, green chiles, green onions and a pinch of salt and pepper.
To serve, take each bun, add your burger patty and top with a little goat cheese and then a big scoop of your corn mixture.
Lots of flavor and texture on these juicy burgers.
