Pizza Pasta Salad

I made this for Smith :).
Smith loves pasta for lunch…hot or cold, he doesn’t care…he just wants pasta.  I whipped this up one night and then put it in his lunchbox over the next three days (Ashby and I had some too at home!).  Really simple, full of flavor, kid tested and mama approved.  Whether you need a quick lunch, simple supper or even a side dish, this pasta salad is for you.This recipe serves four portions for a light lunch or side dish.

Shopping List
1/2  pound of short cut pasta (I used shells)
1 (8 oz) can of tomato sauce
1 tablespoon Italian seasoning
1 1/2 cups of pepperoni, chopped
1 cup of cherry tomatoes
1/2 cup Parmesan cheese, grated

Bring a large pot of water up to a boil, drop your pasta and cook to al dente (about 7 minutes).

After pasta has cooked, immediately drain the water and then run cold water down over the top to cool it off.  Drain off all of the cold water and set pasta aside.

In a small bowl, combine your tomato sauce and Italian seasoning with a spoon.  Pour this mixture over your pasta and then add in your pepperonis, tomatoes and cheese.  Toss until everything is coated in the tomato sauce and then cover and refrigerate at least two hours before serving.

When you’re ready to serve, remove from fridge and garnish with a little more cheese.

A little pasta salad with the flavor of pizza…win, win!

      Yup! You can just pop them in your mouth! That being said, you could totally cut them in half too. Enjoy!
