Meatballs are without a doubt Kensington’s favorite supper. So, when I make recipes like this and fill my meatballs with spinach plus put it over quinoa (which my kids just call rice)…then I really feel good about dinner.
If your kiddos aren’t into quinoa, put your meatballs over brown rice or pasta. You can even serve them plain alongside a green salad. Also, if your family isn’t into Swiss cheese, sub with Cheddar or Monterey Jack…mix and match it. And one more quick thing…this is a one pound meal, so all that means is you can use ground turkey or chicken in place of the ground beef if you like.
A meatball supper just can’t be beat at the Shull house. Enjoy!
This recipe serves four.
Shopping List
1 pound ground beef
1 (10 oz) box of frozen spinach, thawed and all excess water squeezed out
1/2 a red onion, grated (just use your cheese grater or finely chop)
1 cup of Swiss cheese, grated
1 cup of breadcrumbs
2 eggs, lightly beaten
1 tablespoon Dijon mustard
Extra Virgin Olive Oil (EVOO)
salt and pepper
1 cup of quinoa, rinsed under cold water and then drained
1 1/2 cups chicken stock or water
Preheat your oven to 425 degrees.
Line a baking sheet with foil (for easy clean up) and then lightly spray with cooking spray. Set aside.
In a mixing bowl, combine your ground beef, spinach, grated onion, Swiss cheese, breadcrumbs, eggs, Dijon, and a big pinch of salt and pepper. Once combined, roll into balls and place on baking sheet. (I made 12 golf ball sized meatballs out of this mixture.) Roast your meatballs about 15-18 minutes.
Meanwhile, add your rinsed quinoa and chicken stock to a small pot over medium-high heat and bring to a boil. Once it begins to boil, cover and reduce heat to low and simmer another 15 minutes. Do not remove the lid while it’s simmering. After 15 minutes, remove the lid and fluff with a fork. Drizzle in just a tiny bit of EVOO or a tablespoon of butter and a nice pinch of salt and pepper.
Serve meatballs over quinoa.
For a little more flavor in your quinoa, use chicken stock, but if you don’t have any on hand, water will do just fine.

Yummm! Made these last night. I doubled the recipe and used half turkey half beef and swapped bbq sauce for the Dijon. The whole family loved them! I froze half so we will have them again soon 🙂 Thanks!
