It’s cranberry time around here! I love cranberries in my pancakes, muffins, cocktails and desserts. I even like cranberries in some savory dishes too. They’re tart, they’re bright and they’re totally perfect for the holidays. This little pie is only FOUR ingredients! Four! You don’t have to wait for a special occasion to make this…just make it tonight and enjoy it in your cozy socks in front of the TV. ‘Tis the season!
This recipe serves four but can be easily doubled!
Shopping List
1 uncooked pie crust (I used a store bought one but you can use homemade)
1 (21 oz) can of apple pie filling
1½ cups fresh cranberries
1 tablespoon cinnamon
Preheat oven to 425 degrees.
Roll out your pie crust on to a lightly greased baking sheet. Set aside.
In a mixing bowl, toss your apple pie filling and cranberries together with the cinnamon. Spoon this fruit mixture into the center of your pie crust. Fold up the edges around the the crust as pictured above.
Pop the pie into the oven and bake 10 to 12 minutes. Remove from oven and serve immediately (maybe with some ice cream too!).
Cranberries are a little tart, so if you want to sweeten them up a bit, toss them with a tablespoon of sugar about 10 minutes before you start assembling.
This kind of pie is the kind you’ll go back to time and time again.

Shay, do you use the whole pie crust? Is this making multiple servings if so? Just trying to imagine if the pie ends up being something you cut and share or something you eat all in one sitting (by its size).

I love the combo between apples and cranberries. I don't think this is a pie but a galette. Galette are French and can be savory or sweet. Maybe that could be your next series 100 Galettes. Those are so easy to make and eat. Yummy!
