Today, I thought I’d give you a yummy little Thanksgiving leftovers idea.
Take your turkey, take your cranberry sauce, take some white cheddar cheese and a few green onions and make you a quesadilla. Done.
I mean…it’s not Thanksgiving yet, so I whipped these up early November for lunch and let me tell you…Ashby and I couldn’t get enough of them. You can buy some carved turkey and a 14 oz can of whole cranberry sauce and make them any day of the year too. They’re really good!
Enjoy friends!
You can make as many of these as you want…you can even just make one! It’s a great little way to get rid of Thanksgiving leftovers!

Preheat your indoor griddle or a big skillet to medium-high heat. Spray lightly with cooking spray.
Lay out your flour tortillas. Place turkey across the bottom half of each tortilla. Add a few tablespoons of cranberry sauce, a few slices of cheese and a few chopped green onions to each one. Fold the top part down to cover the bottom portion.
Place each quesadilla in your skillet one at a time. Brown on both sides (about 4 minutes or so each side). Remove once browned up and slice in half (to give you two quesadillas). Repeat with your other tortillas.

These look delicious. I was just looking at the cranberry relish stand-up taco recipe of yours and think this one might be a better bet for my kids. 🙂

This is a wonderful idea!! Maybe my dad will try this instead of just eating cold turkey out of the fridge! 😉

Such a great idea! I make turkey tacos after Thanksgiving, but quesadillas seem easier and I'm all about easy when I'm in a food coma! 🙂
