You know that Soul li Soul song that goes “back to life, back to reality”…yeah, those lyrics keep playing in my head today.
It’s over.
The days off.
The holiday food.
The rich and decadent desserts.
The appetizers and wine.
I don’t know about you…but it’s been one nice festive food season from Thanksgiving through New Years and now, it’s back to life, back to reality ;). And you want to know something else? I kind of love it. As much as I like the holiday fare, it’s nice to slip into January in my cozy, un-decorated for a holiday house and enjoy something warm and hearty for dinner. It’s the first Meal Planning Monday of the year. Happy 2016 friends!
Mushroom Risotto for our meatless Monday! Friends…risotto is SO SIMPLE TO MAKE! I can not stress this enough! It’s so easy, requires very little effort and will be on your table in 30 minutes. If you’ve never made it before, I encourage you to try! Plus, this Mushroom version is hearty and even meat-lovers will be satisfied!
My Crispy Chicken with Poblano Sauce is perfect for families. If you kiddos don’t want the sauce, then skip it! They’ll love the crispy chicken!
Andrew calls my Taco Chili “the hybrid” because it’s part Taco Soup and part Chili…and all sorts of delicious! Plus, this is a One Pound Meal, meaning you can swap the ground beef for ground chicken or turkey instead. Dinner is done!
Because January equals Chicken and Dumplings.
My kids love meatballs and they love rice…Mexican Meatballs for the win!
