Hello yummy.
The other day, my kiddos wanted to make cookies, so we opened the pantry, gathered up a few ingredients and decided to make them orange spice. SO. SO. GOOD.
A little spice, a little orange and whole lot of deliciousness! Now, you can eat them without the glaze or with the glaze…either way you make them, you’ll love them!
This recipe makes about two dozen cookies. One large orange should be enough for you zest and juice.
Shopping List
1 box of spice cake mix (do not prepare)
1 (3 oz) box of instant vanilla pudding
2 eggs
1/2 cup veggie oil
4 tablespoons orange zest, divided
4 tablespoons fresh orange juice, divided
1 cup powdered sugar
1 teaspoon light corn syrup
Preheat your oven to 350 degrees.
Lightly spray your cookie sheet with non-stick spray and set aside.
In a mixing bowl, combine cake mix, pudding, eggs and veggie oil with a spatula until all combined. Stir in 2 tablespoons of orange zest and three tablespoons of orange juice and combine.
Drop your dough onto prepared cookie sheet by the tablespoonful and bake about 8 to 10 minutes.
Remove cookies from oven and let them cool on the baking sheet about 5 minutes before transferring them to a wire rack to cool completely.
To make the glaze, in a bowl, beat with a whisk your powdered sugar, corn syrup, remaining 2 tablespoons of orange zest and 1 tablespoon of orange juice. Whisk until combined. Add in a little more powdered sugar if the glaze is too thin or a little more juice if it’s too thick. Glaze cooled cookies and either store immediately or store in an airtight container.
I may or may not have had three. I’m just sayin’…
Enjoy!

these look amazing! do you make the pudding before mixing it in with the cake mix, or do you put the pudding powder in dry?
