
Growing up Little Debbie’s Oatmeal Cream Pies were a staple at my house. The other day, I passed them on an endcap at my local grocery store and thought they would be an excellent after school treat for my kiddos.
These OATMEAL CREAM PIES were as easy as making a batch of oatmeal cookies, spreading store bought frosting across the middle, stacking them as sandwiches and bam, deliciousness.
These were a BIG hit at my house!

Oatmeal Cream Pies

Description
These OATMEAL CREAM PIES were as easy as making a batch of oatmeal cookies, spreading store bought frosting across the middle, stacking them as sandwiches and bam, deliciousness. These were a BIG hit at my house!
Ingredients
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon cinnamon
- 1 cup of butter, softened
- 1 cup of brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1½ cups of oats (quick cooking is fine or traditional)
- store bought vanilla frosting
Instructions
- Preheat oven to 350 degrees.
- Grease two cookie sheets and set aside.
- In a mixing bowl, whisk together the flour, baking soda and cinnamon. Set aside. In a second mixing bowl, cream together your butter and brown sugar with an electric mixer. Beat in the eggs and then finally, stir in the vanilla. Next, slowly add your dry ingredients into your wet ingredients and stir together with a spoon. Then stir in your oats.
- Drop by the tablespoonful onto your prepared baking sheets.
- Bake about about 12 minutes or until the edges are just lightly browned.
- Remove from oven and cool completely before frosting. Once cooled, take a cookie, add a bit of frosting across the middle and stack a second cookie on top. Repeat and enjoy!
Notes
To make these cookies gluten-free, simply substitute the flour for a gf version (we love Namaste!) and make sure your oats are gf too.

I just made something similar to this a few days ago, but for the filling, I used homemade cream cheese frosting. Next level.
My recipe made “spiced” oatmeal cookies. They had ginger, clove, cinnamon. (My son wanted that. I’m not big on spiced desserts, but they were delicious.) They tasted very, very fall. 🍂
