We’re enjoying the last few nights of soup weather over here before it’s too warm out. This little chicken soup is prepared in the slow cooker all day, so that when dinnertime comes, your meal is ready and waiting on you. And bonus, diced hash browns make this even more filling!

This recipe serves four.
Shopping List
1 pound of uncooked chicken breasts
1 onion, chopped
1 onion, chopped
2 (14 ozs) can of cream corn
1 (4 oz) can of chopped green chiles
2 cups of chicken stock
2 tablespoons chili powder
4 cups diced frozen hash browns
4 cups diced frozen hash browns
Cheddar cheese to garnish
In your slow cooker, place chicken, onion, cream corn, chiles, stock and chili powder. Stir in your hash browns. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours. When you’re ready to serve, remove lid and shred chicken up right inside your slow cooker using two forks. Ladle soup into bowls and garnish with cheese.
That’s it! Simple, right? And yummy too!

Hi Shay, when you say "diced" hash browns, do you mean dice up some shredded hash browns, or do you mean using the cubed, square ones? Sorry if the answer seems obvious – I just want to make sure so I don't ruin whole crockpot dinner!! Thanks in advance!

Made this yesterday, it's great! I'm having leftovers for lunch. Only thing i would say is to add salt to taste- I added probably 1 -1/2 tsp salt total so you can throw that in the crockpot with everything else! 🙂
